Sebastien Heloin

For Sebastian, the passion for cooking began early at the age of 13, at l’école hôtelière in preparatory stage in Paris, and was confirmed in french grandes maisons. The Ministry of Education, Le Jamin with Benoit Guichard, Le Ritz with Michel Roth and Guy Legay, Le Scribe with Yannick Alleno, and finally Le Bristol with Eric Frechon. ALLof them have had a decisive impact on his vision of cooking and life: rigor, determination but the human as well, and sharing without which our business has no interest. At the age of 20, his thirst for progress and discover lead him in Belgium and Cannes, Holland and Zurich where he took his first head chef position in a 4 stars hotel. Nearly five years pass before returning to Paris where he finally realizes his dream: open his own restaurant.
